okay maybe lunch is the wrong term since it's usually brunch bc I'm too lazy to cook in the mornings. the way my schedule is set up, I have a huge block of empty time around 10:45 to 12:15. this is actually stupid easy and there's a good chance you guys have already made something similar, but this is what I eat pretty much everyday.


ingredients:

rice (cooked -duh)

1 egg

doenjang + gochujang (unless you have ssamjang then use that)

prosciutto or spam or any similar meat ig

leeks or green onions (your preference) (slice the leeks like you would slice green onions)

sesame seeds (optional)

kimchi (optional)

salt

sesame oil

the quantities are all kind of wonky because I judge off of how much of the pan it fills up (I use a small tamagoyaki pan)


steps:

add some sesame oil to a pan and let it get warm (I never use anything higher than medium heat since you don't want to heat up sesame oil too much)

once warm, add sliced green onions/leeks (I use an obnoxiously huge quantity bc I like to pretend I'm healthy -maybe a little less than a quarter cup of leeks)

add a pinch of salt or so (idk up to you)

after a few min, depending on whether you're using leeks or green onions (leeks take longer the cook) they should be starting to look a little golden, it's better to cook them a little less bc you can always leave them in longer, push them into a little pile in the center

crack an egg directly on top, let cook and flip it over (some of the greens should be a nice golden color)

at this point, get whatever meat you're using ready.

put some rice in a bowl and put the egg and greens on top (or let them cook longer, I like my egg runny)

cook your meat in the same pan if you used the options I listed above it, shouldn't take very long (literally a minute)

add meat on top of egg. 

if you have ssamjang, ignore the following steps and just add some to your bowl:

1. add a small scoop of doenjang (it's really salty, so be careful)

2. add about half the quantity of gochujang

3. add sesame seeds

add kimchi and whatever else you want and mix it all up! (this is why I like my egg runny so the yolk mixes in)


the whole process should take less than 10 minutes and bam! breakfast/lunch

honestly I can only cook two other dishes, so don't expect a lot lol
