The Boathouse Amphicars !!
Seeing as they are in Disney Springs, I qualify this as a non-park experience.
Amphicars, literally amphibious cars that drive and sail, are one of the single coolest experiences that I've ever had.

I would be lying if I said Drawn to Life by Cirque du Soleil, also in Disney Springs, was not also an amazingly unique experience, but I felt it cheating to reuse Cirque.

Performing at Disney Springs in high school was also an one-time experience that I wouldn't trade either. (Honorable mention, haha.)
