Ingredients
- 1 Loaf of Walnut Bread (In Breads Cookbook)
- 1 Cup (250ml) Heavy Cream
- 1/2 Cup (125ml) Coconut Milk
- 5 Eggs
- 2 Tbsp Maple Cream
- 1/4 Cup (60g) Sugar
- Pinch of Salt
- 1 Tbsp Vanilla Extract
- 1 Tbsp Amaretto Liqueur (Optional)
- Butter
Instructions
- The night before, slice the walnut bread into ½-inch (1½-cm) thick pieces. Let sit out overnight to dry out.
- The next day, in a large bowl, whisk together the heavy cream, coconut milk, eggs, maple cream, sugar, salt, vanilla, and amaretto.
- Pour the custard into a deep baking dish.
- Heat a skillet over medium-high heat. Grease the pan with butter.
- Place a slice of walnut bread into the egg mixture. Let soak for 30 seconds, turn it over, and let soak for another 30 seconds.
- Remove the bread from the custard and allow any excess to drip into the dish. Place the bread in the pan and cook until golden brown, 4 to 5 minutes. Turn the bread over and cook the other side until golden brown.
- Repeat with the remaining slices of bread. Serve with butter and maple syrup.
