I think that Cedric and Cho were a cute couple and she did love him, you could tell in The Order of the Pheonix that she really loved him. Cedric did love her and they were the couple that everyone knew around Hogwarts. Their love burned short after what happened with Voldemort, and I think if Voldemort didn't try to come back they would of lasted a long time.
