I love my chef’s knife
I love everything about it
its weight
its sharp blade
its shape
I love the way it fits in my hand
the feel of its smooth black handle
in my grasp
I love the way it rocks up and down
without ever leaving the board
to slice, dice, and mince
I love its broad side
with which I crush
or scoop my handiwork
I love how easily it washes and dries
and slides
back into place.
