" As American as Apple pie "

In American culture apple pie was brought to the colonies by British, Dutch, and Swedes during the 17th and 18th centuries .Though apple pie was not created yet, there were no native apples except for crabapples which were small and sour, therefore apples weren't used for anything other than cider. The colonists were more likely to make pies out of meat instead of fruit. In the 19th and 20th centuries apple pie became a symbol of American prosperity and national pride .

Mini American Apple Pies
( yields 12 mini pies )

Crust
- 2 cups flour
- 2/3 cup butter ( chilled )
- 1 teaspoon salt
- 4 tablespoons water

Filling
- 5 medium apples ( peeled and chopped into small pieces )
- 3/4 cup sugar
- 2 teaspoons cinnamon
- 6 tablespoons flour
- 2 tablespoons butter ( chilled )

Directions

Preheat oven to 425 degrees. Get muffin pan out. No need to grease it.

Crust
In food processor blend flour, salt, and butter until the mixture is crumbly.

Add in water and blend just until it looks like it is sticking.

Take out combine by hand until well combined .

knead by hand and spread dough by using a rolling pin on lightly floured surface until about 1/4 inch thick .

Cut out 12, 4 inch circles from dough using cookie cutter or cup.

Press down one circle into muffin tin to form a bowl shape.

Filling

Mix all filling ingredients by hand and spoon into muffin bowls .

Place another circle cut out on top of each filled muffin bowl and press the edges together .

Bake at 425 degrees for 16 - 18 minutes or until crust is lightly browned.
