Espumillas

Espumillas are a traditional Equadorian dessert, usually hand made for better consitency. Espumilla, which means foam, are made up of fruit pulp, tyically guava or guayaba, egg whites, and sugar ! Espumillas look alot like ice cream and are sold in ice cream cones outside schools and fruit markets in Ecuador. Even though they may look like ice cream, they certainly dont feel like it at all. Espumillas are fun and easy to make, any time you want, and the best part is they dont melt .

Ecuadorian Espumillas
( yields 6-8 servings )

- 8 ripe guavas or guayabas
- 1 - 1 1/2 cups sugar
- 2 egg whites

Garnishes

- berry syrup
- sprinkes
- coconut flakes

Instructions

Peel the guavas ( they should be very soft and ripe ) remove the seeds and keep the meaty flesh parts. Put the guava pieces in a large bowl and mix it with sugar until everything is pureed. You can use a fork or even your hands.

Add the egg whites to the guava and sugar puree, blend using an electric mixer for a smoother texture, use your hands for a coarser texture .

Serve immedietly in ice cream bowls or cones, drizzle with berry sauce and sprinkles or coconut flakes .
