A fruit cake baked in a loaf tin - this is simply delicious and I think you'll love it!
You will need:
225g self-raising flour
50g glacé cherries cut into quarters
175g spread for baking
175g light or dark soft brown sugar
3 eggs
2 tablespoons milk
225g seedless raisins
225g sultanas
1 tablespoon golden syrupMethod:
(Pre-heat the oven to 150°C and grease and line with greased proof paper a 900 g loaf tin.)Place all the ingredients together in a bowl and beat thoroughly until well blended
Turn into the prepared tin and smooth the top and bake in the oven for about two hours or until a warm skewer inserted in the centre comes out clean
Cool in the tin for 10 minutes and then turn the cake out and leave to cool completely on a wire rack.
