At first, i made the first batch for Mon Chéri Syazwana on her 19th birthday. My family grabbed a test and THEN..... from there i had to torture myself by making 4 batches in 3 days !! ( actually i cant stop eating the pavs too, i couldn't help myself its too damn good lol)

Who doesnt like cream cheese right? So, i came up with the Cream Cheese recipe and the Meringue recipe is from Nigella. I only use strawberries and grapes, but you can also use other fruits you like. The recipe is very simple to follow, happy baking!

Nigella's Meringue Pavlova
Makes: 18 mini pavs

8 large egg whites
A pinch of salt
2 and half cups superfine sugar
4 tsp cornstarch
1 tsp vanilla extract
2 tsp white vinegar

Nina's Fresh Cream Cream Cheese

3 cups heavy cream
250g cream cheese (room temp)
1/2cup icing sugar
1 tbsp vanilla extract

Your favourite fruits
Cocoa powder/icing sugar for dusting

METHOD
1. Preheat oven 180•C

2. Whisk the egg whites with salt until they're holding firm peaks but not stiff.
Add sugar, spoonful after spoonful, still beating, Until you get gleaming, satiny and snowy meringue.

Sprinkle cornstarch, vanilla and vinegar on top, then fold in to combine.

3. Spoon meringue onto the baking parchment into size you want, spread and smooth to fill. The meringue slightly higher to put the cream in the centre.

4. Bake into for 3o minutes. Wait to cool.

5. Whip cream cheese and icing sugar
until soft and fluffy. Then add the cold heavy cream and vanilla to the bowl, whip until you get the perfect Fresh Cream Cream Cheese.

6. Dollop cream into the indentation and place the fruits. Voila!
