Stiles' favorite color is blue. He's actually obsessed with it, and I mean like Percy Jackson levels of obsessed. Derek is just like his eye color, in Stiles' opinion. Flecks of blue, which he likes, but it's mixed with so much more, which he loves.
Derek has another thing that's blue about him, and unfortunately it's not the color. This makes Stiles realize that blue isn't as good as he once thought, and his all time favorite thing in the world is now shifting.
