ingredients:
a little sunflower oil, for greasing
175g/6 oz wholewheat flour, plus extra for dusting
2 tsp baking powder
55g/2 oz medium oatmeal
55g/2 oz caster sugar
150g/5 1/2 oz unsalted butter, chilled and diced
2 egg yolks
200g/7 oz plain chocolate, broken into 18 pieces
18 marshmallows
method:
1.preheat the oven to 180*c/350*f/gas mark 4. lightly brush 2 baking trays with oil.
2.put the flour, baking powder, oatmeal and sugar into a mixing bowl, then stir . rub the butter using your fingertips until the mixture resembles fine crumbs. stir in the egg yolks and press together using your hands to make a ball of dough.
3.lightly dust a work surface with flour. knead the dough lightly, then roll it out thinly. stamp out 6-cm/2 1/4-inch circles using a biscuit cutter and transfer to the prepared baking trays. shape the remaining dough into a ball, knead it, then roll it out thinly again and stamp out more biscuits. continue until all the dough had been used up.
4.bake in the preheated oven for 12-15 minutes, or until golden brown, then leave it to cool a little.
5.add a piece of chocolate to half the hot biscuits and a marshmallow to the other half. leave for 1-2 minutes, or until the chocolate just begins to melt, then sandwich the biscuits together in pairs so that the marshmallows are in the centre and the chocolate on top. serve warm or cold.
