Ingredients:
6 apricots, halved and stoned
Juice of half small orange
1 egg white
2 tbsp caster sugar
40g/1 1/2 oz plain chocolate, cut into 12 pieces
Method:
1.preheat the oven to 180*c/350*f/gas mark 4.
2 . arrange the apricots, cut side up, on a baking tray. Drizzle the orange juice over the top of them. Bake in the preheated oven for 5-8 minutes.
3 . Meanwhile whisk the egg white in a large clean mixing bowl until you have stiff moist looking Peaks. Gradually whisk in the sugar a teaspoonful at a time. Once all the sugar has been added risk for further 12 two minutes until the meringue is thick and glossy.
4. Spin the meringue into a piping bag fitted with a medium star nozzle. put a piece of chocolate in the centre of each apricot.
5. If the apricots wobble stick them to the baking tray with a little meringue pipe a whirl of meringue on the top of the chocolate bake in the preheated oven for 5 minutes or until the meringue is tinged golden Brown and just cooked allowed to cool for a few minutes then transfer to a serving plate.
