Castiel doesn't care. Man, woman, other; it doesn't matter to him. He could fall in love with anyone.

It most likely doesn't matter because Castiel has no gender. He's a celestial energy.
So technically Dean can be straight and date Castiel. Yes, his vessel is male, so physically it's a homosexual relationship, but in the sense of "Dean loves Castiel for who he is" It's a whole other story.
