I found Joel....but it doesn't give me much information. I'm just setting up a few possibilities of what these clues could mean.

Jesse McCree laughed with the beauty in front of him. He had hung out with her the entire night and he was head over heals. Overwatch had just disbanded and he had been trying to lay low. He hadn't given anyone his name. He was just a lonely cowboy drifting from town to town. But this woman made him want to settle down and have a nice little ranch in the countryside. Maybe he could. Find a normal job for once and just settle. "What's your name?" The beauty wanted to know.
"J.." he couldn't tell her the truth. "Joel....Joel Morri...Morricone." He could play that off as nervousness right? And it would honor both of his late father figures. Joel was a biblical name like Gabriel and he did include part of the name Morrison.
She smiled at him. "Joel...I like it." That was the beginning of something beautiful. He would later get odd jobs around the town. Eventually even writing a few pieces. He would sneak little hints in there. It was his own way of living on the edge. Maybe secretly he hoped that someone to find him. That someone would make his life interesting again.

The man known as Jesse McCree looked down at an old photo. It was of two boys. Twins. The twins story was quite sad. They older one, Joel, had joined Deadlock to protect his brother and mother, the only parts of his family left. But one day his family had gotten mixed up in one of the fights. His younger brother Jesse had died. Jesse was the real reason that Joel had so easily given in to Overwatch. He would take up his brothers name and put it in history. After all he was the one who took his brothers life away from him. Joel was the evil one. Jesse would be the one going down in history.

Jesse glared at Sombra. How dare she. She knew about his family. About little Joel. They were practically twins. They looked just the same. How dare she threaten him. He had supposedly died all those years ago. Even changed his last name to avoid causing them any harm. Joel had gone on to make a name for himself. Writing news articles. Jesse cared deeply about Joel and he wouldn't allow Sombra to hurt his younger brother.

When someone goes through something traumatic sometimes they dissociate themselves from the event. This is more commonly known as multiple personality disorder. Jesse didn't want to join Deadlock. It was just his only choice at the time. His family held at gunpoint. He dissociated himself from the event and Joel was formed. Joel was willing to do whatever he needed to survive. When Overwatch showed up they helped Jesse with his disease. Because Joel was no longer needed he faded into the background.
When Overwatch disbanded Jesse left to become a vigilante in western America. When he became angry about the world around him he would vent by writing. But he didn't want anyone to find him with the intention to harm him. That is why he used the name Joel. Only those who had been in Overwatch with him would know of Joel.

Ok so I got this idea from reading 2DemonsAU by dilfosaur on Tumbler.
So if Jesse was a demon then he wouldn't be able to keep the same name seeing as he never ages. He would most likely be able to change some things about himself. I mean as a demon his hair would still grow and he can use makeup to simulate aging. But after he "dies" each time he would need a new name. So it kind of makes sense for him to have used multiple names. Maybe Joel was his first name. That would be a really big secret for Sombra to find out.
