Pain d'epi: a type of baguette that is clipped before baking to make it more like a wheat stalk. It is a harder to find kind of baguette and is more commonly associated with skilled artisan bakers. You won't find it at your average grocery store. (Seen in Café Breaks and Cute Girls)
Pain au levain: French for naturally leavened bread. Made through a sourdough starter, so takes a solid month at least before the dough is properly matured. It requires a lotta craft but a home baker can pull it off as well. (Seen in Cafe Breaks and Cute Girls)
