Miche loaf: An artisan farm loaf that mixes wheat and rye flour, occasionally with other flours, in a sourdough starter. Miche can be made and variated in a lot of different ways, it's honestly unique for each baker.

Brioche: often considered a roll or a pastry, this French bread is highly enriched with butter and eggs to give this a nice rich taste to it. It is easy to make, but if you don't balance the flavours correctly you end up with some shit that tastes only of butter and ack. Before I really got into baking I tried to make this brioche recipe for French class and it literally tasted like nothing
but then I tried it again and I conquered it - so it just takes an extra try if you get it wrong (:

Ciabatta: sexy Italian bread. OKAY BUT REALLY Ciabatta actually is the Italian everyday bread. If you want to make basic Italian bread that's still amazing, make a ciabatta. They're known for their mostly square shape but what's really funny is the way it was created - after the French came out with the baguette, the popularity of it boomed and everyone loved it. Italy sat and saw this and got jealous and basically said to one another "what the fuck let's beat the French". So the Italian response to the baguette? The ciabatta. Thus, the ciabatta was born.
