TOMATO FETTUCCINE:
Ingredients:
2 tablespoons olive oil
1 onion, diced
4 cloves garlic, minced
1 cup pureed tomatoes
1 teaspoon tomato paste
1 teaspoon dried mint
1 teaspoon black pepper
1/2 teaspoon salt
1 cup heavy cream
1/2 cup grated parmesan cheese
3/4 pound fettuccine
Green onions for garnish
instructions
Put a large pot of salted water on to boil.Meanwhile you can prepare the sauce. Heat olive oil in a pan on medium heat. Add onions and garlic and cook until tender about 3 minutes.Add in tomato paste and pureed tomato, stir.Season with dried mint, black pepper and salt. Cook until everything is blended. Finally pour the cream and let it simmer for about 5 minutes until the sauce thickens.Add fettuccine into the boiling water and cook uncovered for 8-10 minutes. Drain the pasta reserving 1/2 cup of pasta water.Toss the fettuccine and parmesan with the sauce and stir well until everything is combined well.You can add a little of the reserved pasta water if it looks too dry.Garnish with green onions and serve.
Appetizer:
CHILLI POTATO:
Ingredients
2.5 cups potatoes (3 medium aloo)
2 tbsp corn starch / corn flour (or unbleached organic plain flour)
¼ tsp red chilli powder or paprika powdersalt as needed
1/3 cup oil or as needed
1 to 1.5 tbsp. garlic
1 medium sliced onion
½ to ¾ cup capsicum / bell peppers
1 green chili deseeded
½ tbsp. soya sauce (naturally brewed)
1.5 tsp red chilli sauce
½ to ¾ tsp red chili powder or paprika
½ to ¾ tsp vinegar
Salt as needed
Instructions
Peel potatoes and cut diagonally. Immerse them in salted water for 30 minutes. Parboil them and drain.Mix red chilli sauce with red chili powder using little water. Make a thick paste. Set aside.Sprinkle flour, red chili powder and salt. Toss well.Deep fry or grill until golden.Transfer the oil and keep little in the pan.Fry garlic and chilli until they smell good.Add onions and saute until transparent or pink.Add capsicums and saute for a while.Add the red chilli sauce, soya sauce and vinegar.Add little water and cook till it slightly thickens. To make gravy chilli potato , dissolve 3/4 tbsp corn starch with 3/4 cup water. Stir and pour to the pan.When the sauce thickens add fried potatoes and saute for 2 to 3 minutes. Add spring onion greens.Serve chilli potatoes hot or warm as a starter or as a side.
