Legendary Souls are beings that accomplished great achievements such as saving the world and, after their death, became the object of worship and lore. As a result, they are placed outside the cycle of transmigration of the soul and ascend to an existence closer to a Divine Spirit in order to become a power that protects humanity.
I know just from this information I've recieved, that not all Legendary Souls are good and heroic. There are also villainous and evil Legendary Souls, the world can't exist without good and evil.
That being said...I don't believe I can defeat a Legendary Soul, not on my own. I would most likely need a Legendary Soul in order to defeat one.
