Chapter Three - Recipe

APPLE CHOCOLATE CHIPS MUFFINS

In medium bowl, mix:

2 cups (470 ml) flour
½ cup (115 ml) sugar
1 tablespoon (15 ml) baking powder
½ to 1cup (115 to 235 ml) semi-sweet chocolate chips

In large bowl, mix:

2 medium finely chopped apples (or 1 apple and 1 pear)
1 cup (235 ml) unsweetened applesauce
1 large egg
¼ cup (60 ml) melted butter or margarine

Mix the dry ingredient into the apple mixture until the batter is moist. Evenly scoop the batter into the greased muffin pan.

Bake in a preheated oven at 350F (175C) for 25 minutes.

Makes one dozen muffins.
