In Gaia, a Knight isn't a man who fights to protect anyone or anything, but rather a source of entertainment for those of high class. Chaos, for example, was taking the test to become a real Knight, so he could fight in "martial" combat (the same way as he and Switch'Loc had dueled) as a profession. He had no intent to take another's life, nor to actually fight to kill. Hollowgate has been the biggest producers of knights for centuries, even before the War of The Gods.
