I had one child turning seventeen, on 3/26. My youngest child just turned twelve on 4/9. We enjoyed birthday cakes and gifts but most of all laughs. It's not what we expected or what we planned, but I can say without absolutely certainty my children will not forget #17 & #12 birthdays.
Having time on my hands and a full stocked pantry, I made very amazing birthday cakes. My oldest cake was Oreo with chocolate frosting topped with his favorite childhood cartoon heroes and his 17 candles. This cake was so tasty. I just can't express to you how much I've fallen in love with baking again.
I was speaking to my youngest child and presented with s taste of making a specific flavored cake. Strawberry lemonade with coconut. I embraced the challenge and rolled up my sleeves. With the thinking cap on I began to work. This 4 eggwhite cake was my most decadent creation one could imagine. I had bought the perfect lemon frosting (in advance before quarantine because having 2 birthdays close together works better prepared!) and the cake was a very vanilla flavored cake. To incorporate the strawberry, I added it to the frosting for the middle layer. I placed sliced strawberries on top of the cake and dusted coconut flakes around the outside and top of the cake.
When I tell you this Strawberry lemonade cake was my favorite I'm not kidding! I am 39 and have been baking since I was 6 years old. Not only did I enjoy baking the cake, but it tasted amazing too.
The power to "whoo" your children when you are stuck as home, has no price on it. I'm happy I could give my children something "Amazing" during a time in their lives when there is chaos and uncertainty.
This is a story they will remember and I cannot forget.
