Giyuu's crow is very old. The reason why he never replies to Tanjiro is probably because he's terrified of the crow. He's scared that the crow will make a mistake and get hurt. (But he still worries a bit about the messages not going through)
Headcanon that once Giyuu tried to send a letter back to Tanjiro, but it ended up going to Ubuyashiki instead. He simply chuckled and hid the paper for fun.
