Cauliflower Soup
Ingredients:
• 2 cups of riced cauliflower
• 1 white/green onion, chopped
• 5 large or 7 small potatoes
• 1 tablespoon of minced garlic
• 1 tablespoon of olive oil
• 1/2 cup of milk or heavy cream
• 5 cups of chicken or vegetable stock
• Salt
• Black pepper
• Basil- for garnishDirections:
1: Boil water in a medium pot. Add chopped potatoes and cook until soft.
2: Heat the olive oil in a large pot over medium heat.
3: Add the onion and cook until soft- 6 minutes.
4: Add the garlic and cook until fragrant- 1 minute.
5: Add cauliflower, potatoes & vegetable stock. Cook until cauliflower is tender, 15-20 minutes.
6: Stir in milk/cream, add salt & pepper as needed.
7: Transfer to bowls & garnish with basil.
