Two to three cups of water

one Granny Smith apple cut into pieces (seeds removed)
One stick of cinnamon
4 whole cloves
1/8 teaspoon allspice
Brown sugar to taste

add everything but the brown sugar to a medium pot. Heat mixture to boiling stirring occasionally. And then let it boil for 5 minutes. During this time mash up the apples

 Turn down the heat and let it simmer for 10 minutes without touching it, and then take it off the heat long enough for you to be able to touch it without burning yourself

remove the cinnamon and cloves If you have a French press pour the mixture into the French press and then separate the applesauce from The cider. If you don't have a French press a sieve and a spoon works fine. Or you can hand press it with cheesecloth

at this point use as much brown sugar you want to for both the cider and apple sauce
