American cheese (as in the Kraft Singles) is not actually cheese nor American.  Kraft Singles are legally not cheese, and are in fact a dairy product, mainly made of cut-offs of other cheeses (like Cheddar and Colby Jack), milk, butter, and dehydrated milk.  American cheese was only given its American name after James Kraft, the guy that Kraft is named after, decided to start selling it in Chicago under that name, entirely as a marketing gimmick.  Adding stuff to cheese to make it last longer and not separate when cooking was originally thought up by scientists from Switzerland.
