Made by Nyonya Cooking.
Ingredients:
60g glutinous rice flour
30g tapioca flour
A little bit of crushed (cropped) palm sugar (gula Melaka)
25g sugar
60ml pandan leaf extract
50g desiccated coconut or grated coconut (steamed for 15-20 minutes)
1T(tablespoon) water
1/2 t(teaspoon) salt
How to do:
1. First put the salt inside the coconut, mix it all, and a bit of water. Just use a normal pan with some water in it is also fine if you don't have a steamer yourself. Let the coconut be steamed for about 15 to 20 minutes.
2. Add sugar inside the glutinous rice flour, also tapioca flour then mix everything with a spoon. Then pour a little bit of pandan leaf inside the rice flour. So knead everything into a nice dough. Divide it into little balls. Flatten the dough and add a small piece of the palm sugar and roll it up into a nice ball.
3. Put all of the gula Melaka(dough) into a pot of boiling water. If you see it's floating then it's ready to scoop them out of the pot.
4. Take out the steamed coconut and also put the 'onde onde' on the coconut that is already floating. Have a nice meal. Enjoy.
