I opened the windows of the bakery, and I could see all the other shops with their windows, and curtains closed. We only opened at 9:00, and currently it is 6:00. You may be wondering why i am up this early, but it is because I have to do some baking, so we have a moderately full stock. We already had bread, biscuits, cakes, and buns, but we needed a few more cakes, and pies to. I run the bakery with my Mum, and Granny, but Mums away for now, and granny doesn't get up till 8:00, so I do all the baking in the morning. I start preparing all the ingredients, and put on my white starch apron. It has little embroidered flowers on the bottom two corners, and it looks really nice. I got out five bowls and five spoons. I started with the pies. I decided to make a strawberry latice pie and normal strawberry pie, apple pie, cinnamon apple pie and a summer fruits pie. First I added flour, sugar, and salt to one bowl and whisked till combined, then added my cubes of butter and crumbled it into the dry mix. When I could see a couple bumps, I knew that I needed to add water. I added it bit by bit, mixing together the water, until it is a dough. Now I made all the dough in one batch, so it was a massive bowl. I put that out in the sun to prove. Then in another bowl I made the filling for both the strawberry pies. I added cinnamon, sugar, flour, salt, vanilla extract, and loads of strawberry slices, and mixed till combined. Since it didn't take that long, I decided to make the filling for the rest of the pies. For the apple pies(the normal and cinnamon), I peeled some cooking apples, and put them in a pan with some boiling water. I let them simmer, and got on with the summer fruits. I put raspberries, strawberries, blackberries, and blended apple in a bowl, added some sugar, and started mixing them up. When they were all combined, i went back over to the stove and took the apples off. I got a metal bowl, and a linen cloth. I poured the apples into the linen cloth, and let it sit there for a while. The kitchen smelt amazing, and it may of been that that woke my granny up. I heard the stairs creaking, and saw my granny's head poke through the kitchen door.
" Hello dear, i see you have been busy this morning?!" She said not expecting me to have done this much in about an hour. To you it may not seem much, but to us time passes so quickly it feels like fifteen minutes. Like when you are reading, or walking in a forest. Time is lost.
" Yes granny. The dough is still proving though, so i need to get that in soon." I replied
"Yes dear you don't want to leave that to late. Also is some of that apple juice free?" She asked clearly wanting some
"Yes granny, but I am going to add something to it first. The fire is going on in the living room, and I am drying some clothes, so yeah. Also there is some biscuits, and tea in there." I said pleased with myself for remembering the tea
"Thank you, your mother will be swept of her feet when she sees how much you have taken on." She smiled at me then went into the other room. I went outside and got the dough. I then got the apples, and split them into two different bowls. One I added cinnamon, and suger to. The other I left plain. I added a sprinkling of cinnamon, and sugar to the apple juice, and poured it into a cup for my granny. I poured some for me as well since it smelt delicious. Anyway I brought the mug into the kitchen, to be met by my granny by the window with a bird on her hand (okay true story yesterday morning I woke up to a bird in my bedroom. Literally in my bedroom, and then today a moth landed on my arm).
"Granny I have got your apple juice." I said she turned her head around and said
" Okay leave it on the coffee table. Will you be joining me?" She asked that because when mums was here, me and granny use to have a drink, and play cards or read a book.
"Yes I just need to finish the pies." I said. Granny nodded her head, and made her way to the sofa, whilst I went back to the kitchen. I separated the dough, then rolled them out and then put them to the side. I grabbed the apple cinnamon filling, and then put one of the pastry circles (the thing I had just rolled out) in the tin that was on the worktop to my left. I them put the apple cinnamon filling in the tin, and then put another layer of pastry on top. I got a fork, and made little holes around the outside, and then some more in the middle, and then put that aside and got on to the next one. I repeated the process for the cinnamon apple, and strawberry one. For the summer fruits one I did the same, but had some cut outs of strawberries and raspberries so I made pastry cut outs and put them on the pie (making sure to not block the holes). For the other strawberry pie, I did the first few steps the same, put the pastry roll out into the tin, then add the filling. This is were I gets different. Then with equal strips of pastry , I started to do the lattice. So I got one of the strips and laid it horizontally, the three strips, and laid them vertically. I then got another strip of pastry, and laid it horizontally over the vertical prices leaving about a one inch gap between each horizontal strip. Then I folded the vertical pieces back over leaving a inch gap between the last horizontal one, and the fold. I then put a horizontal piece down, and then folded the vertical pieces back over. I carried on that until I had covered the whole pie. I cut of the excess bits that we're sticking out, and all the pies were ready to go in the oven. I opened the oven up, and put all the pies in there, and quickly did the cake batter. I was going to make two, a Victoria sponge, and a chocolate orange cake. I got two bowls added 8 grams of flour, sugar, and butter to each bowl. I then cracked four eggs into each bowl, and gave it a good mix. Then for the Victoria sponge I added some vanilla extract, and for the chocolate orange cake, I added some chocolate powder. I mixed both of those in well, and made sure to not see any lumps. I then poured one bowl into two tins, and the other bowl into the other two tins, so there were four tins, two chocolate, and two vanilla. I put those in the oven as well, and left them all to cook. I went back into the living room and saw my granny sat in her armchair by the fireplace reading her favourite book.
" Haven't you read that book like a million times?!" I said with a smile on my face. She turned towards me
"Yes I have and yet never fails to bore me." She said putting the book down on the little stool next to her armchair. I grabbed my apple juice, and sat in my armchair next to the fire. Both the armchairs are the same. A dark sage green with embroidered fairies. They were so pretty, and when I am sitting in them playing cards, or reading a book, writing, drawing, whatever. I feel like I am alone. Not in a bad way, but I feel like the fairies welcome me into there world. Obviously they don't it is just my wild imagination. Anyway me and granny decided to play beg yah neighbors out of doors, since that was her favourite game. After one game(that went on for fifteen minutes), I went to check on the pies and cakes. To my surprise they were all done, so I took them out, and placed them all on a tray, and opened the windows as far as I could to help cool them down a bit. I started on the fillings for the cakes. For the Victoria sponge, I got some whipped cream, and some strawberries, and for the chocolate orange cake, I got some marmalade, and dried orange peel. I let them cool down for a bit, and went to play another game with granny. She actually had a game of snakes and ladders up when I entered.
“I thought this would be a change?" She said
"I love snakes and ladders we should play this more often." I said. After that game, granny came to help me on the cakes, and she started to put the pies, in the display case/cabinet in the shop. I grabbed the Victoria sponges, and flipped the tins over, with oven gloves of course. I then added the whipped cream around the outside ring of the cake, and the strawberries for the next ring, and carried on that pattern, until I got to the very middle. I then layered the other Victoria sponge on top, and sprinkled a bit of icing sugar on top. My granny came in just as I was finished.
" Wow that looks amazing, you will be even better than me!" She said laughing like she does." I can take this out, and do the chocolate orange cake, and you can have a rest. You have done so much already and it is only..." She pauses whilst she checks her watch.
" Its 8:45! We need to be ready to open in fifteen minutes!" She said panicking
" It's okay granny, I will go and get it cleaned up, and you just need to finish the cake, and bring it in. Okay?" I said being the calmer one of us two
" Okay." She says takes a deep breath, and get on with the cake. I take my apron of, and hang it on the door, and rush to the shop area, and begin tiding. First I gave it a dust, set up some chairs, wooden and ones with cushions, since it gets very busy around here. I then wiped down the glass cabinet/counter, to make sure people can see. I also made sure we had enough bags, napkins, and twine(to tie the bag together to make sure it doesn't fall out). I made sure the till was empty from the day before, and then finally opened the curtains, and opened the windows. I saw the other shops open there curtains and windows.
"Good morning Mrs. Miller!" I said
"Good morning Evelyn!" She shouted from across the street.
"Good morning Miss. Clark!" I said to the shop to our left
"Good morning to you to Evelyn. You alright?" She asked Miss. Clark is always so kind
"Yes thank you. You?" I asked
"Good and ready for the day ahead." She said smile sat me, then went back inside her shop ( A/N this reminds me of the scene from beauty and the beast. Where there saying "bonjour good day how is your family?" "bonjour you're good day how is your wife." Sorry it just reminds me of it.)
"I've got the cake!" I hear my granny sat, as she enters the shop, and places the cake in the counter/cabinet.
"Well done Evelyn, it looks wonderful!" She says with a smile on her face. " But you forgot something again." She goes over to the door, opens the little curtains, that shield the window in the door, and flipped the sign over to open.
" I was going to do that." I said with a smile ( I wasn't really, but you know). She smiled back, as we got our first customer of the day. Let the day commence!Author Note
