Red velvet cake, hm? Sounded easy 2 minutes ago but all these instructions are making my head spin. Better figure it out, you're running out of time. I start by whisking together my dry ingredients: cake flour, unsweetened cocoa powder, baking soda, and salt. Then mix up the wet ingredients starting with some unsalted butter and granulated sugar.

Once the butter and sugar are creamed together, I beat in two eggs until well combined. Then mix in the rest of the wet ingredients: some oil, red food colouring, vanilla extract, and distilled white vinegar. Once I've mixed up the wet ingredients, I alternate mixing the dry ingredients in three additions with some buttermilk. Alternating the dry ingredients with the buttermilk helps to prevent over mixing the cake batter which can lead to a denser cake.

I put the batter into the cake pan and slam the oven door once it was put in. Taking off the flour covered, spiderman apron and throwing it into the wash, what? I received it from a friend. Having to change clothes were always annoying, but I kinda had to since my shirt and pants were also covered in flour and oil-

I found my second favourite pair of cuffed, brown jeans and a black turtle neck to wear with it. Upon looking in the mirror, I frowned. Not liking how tight the turtle neck was on my body. Switching it for a plain black T-shirt and a cool Varsity jacket on top. I also put on some rings because they made me feel badass.

The oven then went off and I rushed over before the cake burned. "Okay! Time to decorate this bad boy! " I went to get the baking sugar, cream cheese and butter. Mixing them all with an electric mixer because I would break my hand if I tried it with a hand mixer. I lathered it all over the cake and put it on a big plate for serving. Now for my 'Favourite' part! Setting the table...

So that's exactly what I did. Since almost all my dishes were in the dishwasher, I had to bust out the Avengers plates and paper napkins. Putting down plastic cutlery to go with it and why not bring out the plastic cups as well? Makes the place look livelier.

By the time the place was all set up, I checked my phone for the time and My mom should be arriving any minute now. So I sat down and waited.

The door swung open and I saw my Mom walk in. She didnt really dress up, besides for some fancy jewelry she got from her boyfriend.

"Baby!" She smiled as she saw me. Coming in and sitting down on one of the chairs. "Happy birthday". She looked around at my apartment and I could tell that she was gonna find a passive aggressive way of telling me how lazy I was and that she only wanted to help.

"Thanks mom" I smile. I never wanted to say that her presence made me feel empty but its true. She was never really here and only managed to come during my Birthday and during family gatherings with her boyfriend's family and sometimes with my aunts and uncles.

I got up and started slicing the cake, putting it on her plate and my own, hoping she would be proud that I baked this cake myself instead of just buying an already made one in a store.

"Oh, no thank you dear. Im trying to stay slim! Ajack told me he was gonna take me to the beach tomorrow and I need a nice bikini body to impress him" She dismissed me with a smile on her face as she thought of the beach and the warm sun. "I can practically feel the tan coming in already!" My mother spoke as she hugged herself. Ajack was her Boyfriend. A stuck up dude who wanted my moms full attention, or at least thats what it felt like.

I fell silent and sat back in my chair for a couple moments. Well, on the plus side, mom was too busy thinking about what a good time she was gonna have at the beach to say something rude about how I dressed, how my skin looked or something about my living arrangement.

Almost 30 minutes of silence passed, I made some attempt at small talk with my mom but it always ended in her bragging about the riches Ajack was spoiling her with. A couple more minutes passed and my mom got up.
