If you've ever noticed, Halt got a bit mixed up with his Gallican speaking and "accidently" said Horace was from "the Order of the Oak Pancake". To me, this indicates that he really loves pancakes!
So while little apprentice Gilan is asleep, Halt sneaks to the kitchen in the middle of the night to eat... guess what? Pancakes! With lots of syrup.
Gilan just sleeps away... not knowing a thing about his mentor's midnight sweet-craving.
He also does the same with Will, except he has to drug the boy's coffee to make him sleep while Halt goes to eat pancakes. When Will wakes up, he only suspects Halt was talking to him the whole time.
(I know Halt wouldn't really do this, especially since he's technically Will's father, but like I said, just a comedy)
