Ok, so these are my own personal headcanons, but feel free to comment with your own or add to mine!
Also, for people who don't know what age regression and pet regression is:
Age regression: A not sexual coping mechanism, where the person who is regressing goes into a headspace where they feel and act younger than they are. (I am an age regresser, so I'll try to write it to my best abilities.)
Pet regression: A not sexual coping mechanism, where the person who is regressing goes into a headspace where they feel and act like a variety of different kinds of animals (Ex. Cat, Puppy, Fox, etc.) This is different than being a therian or a furry, though I know some within both those communities that pet regress. (I have just recently started to pet regress, so I'll try to write this as best as I can.)
Ok, so here are my personal headcanons, including some age and pet regression ones!
*These are my own opinions, and I have nothing against anyone else having a different opinion!*
- He loves painting with a small audience, often prefers Barnaby or Sally or both to sit by and watch him!
-(I literally just found out about this!) He eats with his eyes! That is crazy! But super cool at the same time! He doesn't just like shove it in his eyes though, he like looks at the food deeply and then either blinks or it just looks at it (I've seen both versions, not sure which one is the actual, maybe both) and then the food is just gone! Magic bro!
-His favorite food cannon is apples, but I think he would also really like sweets, and probably would really love a good apple pie! And cakes and pastries, etc. etc! I can just imagine him snacking on some cookies while painting!
- His voice when he sings, idk how y'all feel about it, but I think, with the way his voice is ofc, that his singing voice is beautiful! House probably agrees and loves for him to sing it(also side note, what are Houses pronouns? I've been using it/it's for it, but idk, with it being alive, shouldn't it have other pronouns, unless House likes it/it's pronouns, then go off House! Lol) small lullabies, cause his voice is super calming and probably perfect for lullabies!
-He probably likes to go see Howdy at his shop and just like be there, not buying anything, but just be there and keep him company, imagine a Disney teen who's best friend works at a store so they go to hang out with that person while they work, that kind of situation!
-Wally is on the smaller size when it comes to the cast, so he is one of the petite ones, I mean just look at him compared to the others:

So off of that, I think, one, he prefers to look someone in the eyes when speaking to them, probably finds it rude if you don't, so second thing, he probably, in order to look some of the taller ones in the eyes when speaking, he probably either straight up pulls them down to his level, or has them pick him up, or somehow gets up to there level to look them in the eyes, I can just imagine him sitting up on the counter in Howdy's store so he can look him in the eyes!
-Ok, so when it comes to age regression, I think if he did age regress, he would probably regress to the age of 5-7! I also think he would be embarrassed by his regression so he would do it in private, either hiding in House or somewhere else. And would get his things for his regression by lying what they were for when buying them from Howdy's store. (I'm assuming Howdy's store has everything, not only food.)
-And finally pet regression, if he were to pet regress, I think he would either be a cat or a fox! He would do puppy regresser activities though and might like chewing on those rubber chewing pendent necklaces I see all over TikTok (or at least my for you page)
