Ingredients:

- 1 teaspoon of salt (adjust to taste)
- 1 teaspoon of ground cumin
- 1 teaspoon of ground coriander- 1/2 teaspoon of ground turmeric
- 1/2 teaspoon of ground black pepper
- Handful of fresh herbs (such as cilantro or parsley), chopped (optional)
Instructions:
1. Rinse the rice or grain thoroughly under cold water to remove any impurities. Drain well.
2. In a large pot, combine the rinsed rice or grain with the water. Bring to a boil over medium-high heat.
3. Reduce the heat to low, cover the pot, and let it simmer for about 20-30 minutes or until the rice or grain is cooked and tender. Stir occasionally to prevent sticking.
4. While the porridge is simmering, prepare the spice mixture. In a small bowl, combine the salt, cumin, coriander, turmeric, and black pepper. Mix well.
5. Once the rice or grain is cooked, sprinkle the spice mixture over the porridge and stir thoroughly to incorporate the flavors. Adjust the seasoning to taste.
6. Continue to simmer the porridge for an additional 5-10 minutes to allow the flavors to meld together.
7. If desired, add chopped fresh herbs, such as cilantro or parsley, to the porridge just before serving. Stir well.
8. Serve the spiced porridge warm. It can be enjoyed on its own or accompanied by simple accompaniments like yogurt, pickles, or boiled eggs.
