Not really Thai but I call it that because of the sauce I use in the glaze.
Ingredients
-Sweet chili Thai sauce ((I use my local store brand, but I know there are other versions of it))
-brown sugar ((you can substitute this for honey))
-chipotle seasoning ((I use the one from the brand Badia. You can usually find it in the Hispanic section of your grocery store))
-hot sauce of choice ((I use Texas Pete))
-jarred minced garlic
-pepper
-sesame oil
-soy sauce
-onion powder or sliced green onion
-SalmonDirections
1) add your Thai sauce to a bowl. A solid glob will do. Then add a few dashes of soy sauce, about a spoonful of sesame oil and brown sugar, pepper and other seasonings to taste. Mix the glaze with a spoon. To put it on your salmon, use a basting brush. If you don't have one, just drizzle it on with a spoon
2) drizzle a thin layer of sesame or olive oil in a pan and heat on medium-low heat. Once the pan is hot, lay your salmon skin-down onto the pan. Baste some glaze on the top of the salmon. Flip your salmon every so often, adding more glaze to all sides of the salmon until the salmon is cooked through.
3) Serve with rice or rice noodles ((you can also serve with steamed broccoli))
Notes
I use a cast iron pan, and haven't used anything but a cast iron, for this recipe. I don't know if this will work in nonstick or stainless steel pans like it does for me and my cast iron. Let me know how it turns out if you try it without a cast iron :)
