Satai Karak is traditional food from Surabaya. Basically, this is not regular 'satai'. We have many variations of satai, also known as beef skewers. If the regular satai uses chicken or beef that is cut into pieces, Satai Karak uses cow intestines.

The differences between Satai Karak and the regular one are that Satai Karak uses more spices and herbs, especially chili in its peanut sauce. It will taste spicier than regular satai, but it's tasty. Next, it is served with steamed black sticky rice and shredded coconut.

From the sources that I found, they said that the idea of Satai Karak was found during colonialism. It's basically passed down from generation to generation. The authentic one is located in Ampel, Surabaya.

Today, there are many variations of Satai Karak. Sometimes sellers just use regular beef to make Satai Karak. But in my opinion, the best Satai Karak is when they use cow intestines because it's very delicious!
