-2 Years after Gravity falls
Dipper had finally given up trying to get back to Gravity Falls because after Mabel fessed up to their parents about what truly happened at Gravity Falls, it was hopeless. Dipper stayed in touch with his friends at Gravity Falls, occasionally texting Wendy, Soos, or Pacifica to check how they were doing. Mabel had already lost hope as well.
-5 Years After Gravity Falls
Dipper never forgot Wendy, as his love hadn't faded in the least bit. They rarely texted or called much anymore, as they both secretly thought it'd be better to just let go.
Mabel didn't care anymore and basically forgot about Gravity Falls as she was on of the most popular girls in High School by now. Dipper was also popular, just not as much as Mabel as his "Dorky" problems had faded. Dipper was now 5'10 and still growing.
-8 Years After Gravity Falls
Mabel had gone to Cal Tech for college while Dipper had gotten into Oregon St. Dipper was now a tall 6'0 and wasn't skinny anymore, but wasn't ripped. As soon as Dipper was doing good in college, in his second year, to celebrate his summer he finally drove back to Gravity Falls.

I just tried this out in case people were confused if I just straight up went "8 Years Back to the Future!" If you don't get that reference you have no soul...
