This is a very very simple part, because it's literally eye color.
For the most part, most eye color can appear on any coat color (not counting breed specific eye colors like point cat blue.)
Green is the most common eye color and can happen on any coat color. They aren't very common on golden cats, though, I made a mistake when giving them to a main character!
Hazel eyes are really pretty. They're basically green with touches of brown or yellow. Really gorgeous!
Gold and yellow are typically under-used in fanfic but they can be very very charming on a cat. They are actually common peepers, and some of my personal favorites!
Amber/orange eyes are my other favorites. I find them handsome *insert blushes here* although some people think they represent an evil cat? They are gorgeous, and is suggest them for any cat!
Copper eyes are very intriguing. They are almost never brought up in fics, probably because they look almost exactly like Amber. They can look a bit more brown, though.
Blue eyes. Oh holy mollies. Everybody has their cat have blue eyes, but if you really want to know, they aren't even common. There has to be a fair amount of white on the cat, like at least 50% or more white (the chances do increase with white on the face.) It's very very rare for a cat to have blue eyes with little to no white on them. Unless they're a Siamese or tonkinese or a few other purebred cat breeds. Purebred cats also probably wouldn't last a moon as a warrior with all their health problems, too, so I wouldn't go with the purebred ex-kittypet route. Maybe if your cat has some of the purebred kitty let blood? Anyway, blue eyes: not as common as you all think.
IMPORTANT NOTE: blue eyes CAN cause deafness. White cat with blue eyes are most likely DEAF. This can be avoided with hetero chromea, aka odd-eyes. Odd eyes are usually blue with a normal color (green through copper.) Even then, the side with blue eye can be deaf, as seen with my main character Frostleaf: she has a left blue eye and a right green eye. Her left ear is deaf, while her right ear isn't impaired.
That's about it on eye colors. There is a genetic mutation called ojos azules. It can give a sort of dark bluefish eye color to non-white cats, like what Heatherpaw has (Lionblaze's love interest at one point) Those are very rare, so use them sparingly.
