I know that it looked like mother gothel died but she didn't she just vanished into thin air. The way she was able to vanish into thin air was because her body was completely filled with Rapunzel's magic form her hair. Here is the thing, if you use a lot of the magic from Rapunzel's hair and you get killed ( If you die naturally then the magic in Rapunzel's hair will not save you from that fate because its natural to die) you don't die. If you have ever watched the movie "Tangled" than you would probably know about the song that was used to make mother gothel restore her youth ( flower gleam and glow, let your power shine, make the clock reverse, bring back what once was mine, etc.) well that song mainly restores your natural undamaged self (say someone stabs you in the back but you are full of the magic from Rapunzel's hair, since you had that magic within you and you were about to die unnaturally, you don't die).
