Sweet Potato Pie Two Ways

Ingredient:
3 cups mashed sweet potatoes 

1 (5 ounce) can evaporated milk

1 1/2 - 2 cups sugar ( to your taste)

1 teaspoon vanilla

1/2 teaspoon lemon extract

 3 eggs (beaten)

1/2 cup margarine (softened)

1 pinch cinnamon (to your taste)

 1 cup non-sweetened flaked coconut

 2 deep dish pie shells

 Preheat oven to 350°F.  Mix sweet potatoes, sugar, margarine, and evaporated milk using a hand mixer.  Add eggs one at a time mix well , spoon half of sweet potatoe mixture into another bowl, to one bowl add  vanilla and cinnamon mix well, to the other bowl add lemon extract and coconut mix well . Pour each bowl into its own frozen pie crust.  Bake for 1 hour until golden brown.  Let rest for 1 hour before slicing. Serve with whipped cream and enjoy.
