I've been thinking about this (and it's a really bad time to be posting this right now) but I don't think that Grunkle Stan may die.
It has been foreshadowed many times throughout the show that Grunkle Stan will face a fiery death, but all those hints may be misleading everybody. It is true that "at least one character will not survive the season", but instead of death, Alex may be talking about losing a character forever in some other way.

What do all these hints mean?
I have two theories of what might happen to Stan.
One, Bill might fuse with Grunkle Stan. (And at that moment, the entire Steven Universe fandom screamed.) I believe that the only reason Bill is unable to escape Gravity Fall's forcefield is because it blocks off monsters and demons. If Bill had the power to fuse with a human, he'd be able to cross the barrier and take over the world. He needs somebody smart and strong, so he can be even more powerful than his physical form. Ford could be a better person to fuse with, but Ford's metal head may block his powers. Bill might just steal the leader of the rebellion to gain power and control. It's not exactly death, but the Pine's may lose Grunkle Stan forever once fused with Bill.
Another theory is that when being banished to the Nightmare Realm (simply assuming the fate of Bill Cipher), Bill will take Grunkle Stan with him. Grunkle Stan wouldn't be dead, but didn't quite survive the season. Technically speaking, Grunkle Stan's kidnap will lead the Pines on another adventure to the Nightmare Realm. I know that Weirdmaggedon III is the series finale of Gravity Falls, but there could be a movie event of Gravity Falls. This means that Weirdmaggedon III will be the most intense episode ever. When everything seemed calm in the end, the show might hint another adventure the Pine's family has to take in a one-and-a-half-hour movie event!
