Homemade Energy Cookies

I had to post these cookies because they are healthy and super yummy!  But please make sure to have ALL the ingredients first and follow it correctly or it could be a disaster.  Last time I made it was terrible and the worst part about it was that I had to share it in health class in school.  Good thing I never will have to relive that moment.  I did it correctly last time and I could not stop eating them!  Hope you enjoy!

2/3 cup water

1 cube butter (8 oz) softened

1/2 cup sugar

1 tsp vanilla

1 cup whole wheat pastry flour

1/2 cup oat flour

1/2 cup brown rice flour

1 cup quick oats

2 tablespoons cornstarch

2 tablespoons millet (opt. for crunch)

3/4 tsp salt

1/2 tsp baking POWDER

1/4 tsp baking SODA

1/2 cup chocolate chips (I over heap it)

1/2 cup craisins (You can use any raisins but these are the best for it)

1/2 cup coconut ( I'm a sucker for coconut its really great with it)

Preheat oven to 350

Step 1:  blend together butter and vanilla 

Step 2:  put in all the other dry  ingredients (All the flour, oats, ext.) Then add the water, mix again

Step 3: Blend till blended well.  MIXTURE WILL BE DRY.  Bunch it together likes its sugar cookie dough.

Step 4:  Divide into 30-ish balls (that's how tiny they should be...they get normal cookie size in oven) put on greased cookie sheet.

Step 5: Bake for 12-14 min (or until they rise slightly)

Step 6:  Cool and enjoy!
