Creme Brulee (Food Network)

IF you've never tried creme brulee (a french dessert)  you are missing out.  I used to make creme brulee all the time and it was a huge hit in my family and my friends.  But I must warn you this is a Intermediate dish, so if your feeling up to trying something new, this is for you.

Ingredients:

1 quart heavy cream (4 cups)

1 vanilla bean (split and scraped)

1 cup vanilla sugar, divided

6 large egg yolks

2 quarts hot water (8 cups)


Preheat oven to 325 degrees              Makes about 6 servings

1. Place the cream, vanilla bean and its pulp into a medium saucepan, set over medium high heat and bring to boil.

2. Remove from heat, cover and allow to sit for 15 minutes

3. Remove vanilla bean and reserve for another use (OPT.)

4. In medium bowl whisk a 1/2 cup sugar and egg yolks until well blended (until  lighter in color)

5. Add cream a little at a time stirring constantly

6. After finished stirring put in the little small bowls called ramekins. (especially for creme brulee) into a large cake pan or roasting pan.  

7. Pour enough hot water into pan to come up to the sides of the ramekins

8.  Bake until creme brulee is set but still trembling in the center.  About 40-45 minutes

9.  Remove ramekins and refrigerate for 2 hrs minimum.  It can be refrigerated for three days max.

10. Remove ramekins from fridge for about 30 minutes (PLEASE DO THIS!) 

11. Divide remaining 1/2 cup vanilla sugar equally among 6 dishes

12.  Using a propane gas torch melt sugar to make a crispy top.  (NOT UNTIL BLACK...MOSTLY BROWNISH)

13.  Wait (Lol one more time!)  for 5 minutes till serving.

14.  Enjoy!
