WARNING!! contains nuts!!
Buckeye balls are my dad's favourites. (and mine!) They are super easy to make (no bake!) can be stored in the freezer and are perfect for christmas cookies. One thing I find you should look out for is that you take extra care that the dough is mixed, other than that these are so easy and so good that I make these all the time, if you know these are going to be hits it's super easy to double the recipe. (they disappear from my freezer very often!)
Ingredients:
- 2 cups of powdered sugar
- 1 cup of peanut butter (smooth or crunchy they both work well)
- 1/2 cup of butter
- 1 tsp of vanilla
- 1 1/4 cups of chocolate chips (semi sweet but milk works too)
Instructions:
- Put the powdered sugar, peanut butter, butter, and vanilla in a large mixing bowl and stir until all are mixed. (dough should form a firm ball, if not add a bit more powdered sugar)
-roll the dough into small balls (bit more than bite sized)
-in a medium saucepan heat the chocolate chips and let them melt in low heat.(stir constantly so bottom doesn't burn!)
-with a toothpick dip the balls into the melted chocolate and place them on a plate with waxed paper.
-put in freezer for storage or until chocolate hardens
