These are just delicious. Make sure you get green tomatoes (unripe) for this. Green tomatoes have a nice tang to them and have less juices which make them firmer and better for frying. You will have to get close to a sizzling pan in this but if you are comfortable with that and want something as a side for a dinner for two or just as a savoury snack, these are your man.(Well, tomato.)
Ingredients:
- 1-3 large green tomatoes washed (depending on how many you want to feed)
-1 large egg beaten
-1 cup of store bought seasoned bread crumbs (crushed ritz crackers work as well)
*-sometimes I like adding a shake of salt and pepper to the breadcrumbs for extra flavour.
Instructions:
- Slice tomatoes thinly (if they look too thick it's ok, they don't need to be paper thin, just a centimeter or two, if you sliced the tomato in half and that's your slice, then we have a problem)
-Beat the egg in a small bowl, and put the breadcrumbs in a separate, shallow bowl.
-Dip the tomato slices egg first then breadcrumbs (so they stick)
- Drizzle a small amount of vegetable oil in a medium frying pan and turn the stovetop to medium high heat.
-When the oil heats up place tomatoes (as many as can be fit, preferably with some space between them) in frying pan and fry until both sides are a toasty brown.
-serve warm and enjoy!
