Sweet And Sour Chicken

Heads up! these are a little bit tricky because you basically deep fry them and then bake them, these are better for people who know what they are doing but if you want to try I am not stopping you. I'm just the girl typing this up.

Gosh diddly darn it's been too long, I planned on updating this at least twice a week but it's been a bit longer than that, sorry. Anyways, this next dish I like making makes me feel warm inside, comforting really. You can make this whenever but I like making this when it's cold, I'm sad, I feel like chicken, or when my favourite character dies and I am not emotionally alright. I also suggest serving this with rice because the sauce is killer with a combination of rice and chicken.

Ingredients:

chicken:

-3-4 boneless chicken breasts

-2 eggs

-1 cup of cornstarch

Sauce:

-3/4 cups of white sugar

-4 Tablespoons of ketchup

-1/2 cup vinegar 

-1 Tablespoon soya sauce

-1/4 teaspoon of garlic salt(optional)

-1 can of pineapple chunks

Instructions:

-Cut chicken breasts into bite sized chunks, pour cornstarch into shallow bowl add salt and pepper for flavouring, beat egg in another bowl.

-Heat oil in a large wok or deep pan, about an inch deep of oil, just enough to fry the chunks.

-Dip chicken chunks egg then cornstarch so the powder sticks and place them in the pan to fry(about 2 minutes or until golden brown.)

-Put fried chicken in a large baking pan

-In a bowl mix the sugar, ketchup, the pineapple (juice, chunks and all), vinegar, soya sauce, and garlic salt till combined.

-Once the sauce is mixed and the chicken is all fried pour the sauce mixture over the chicken in the baking pan until covered.

-Put baking pan in the oven at 325 degrees for 1 hour stirring every 15 minutes.
