🌟 spicy comfort kale soup 🌟
( copy-cat olive garden zuppa soup! )

↝ INGREDIENTS ↜

- 1 pound spicy ground Italian sausage (or lean ground beef / chicken) !

- 2 cups of torn up kale ( or swiss chard or spinach! honestly a combo of the three sounds fun)

- 1 large onion diced
- a couple of slices of chopped bacon!
- 32 ounces of chicken broth
- 1 cup heavy cream
- a pinch or two of flour

- minced garlic
- crushed red pepper flakes
- cayenne, chili pepper powder, salt/pepper and cumin to taste

- 4-6 potatoes (russet or red) thinly sliced

↝ DIRECTIONS ↜

step one!
- dice onion, mince garlic

- in a large pot prepare sausage/ meat until brown(5/7mins) , add onion and garlic till golden (abt 5 more minutes)
remove from heat

- separately prepare bacon, drain, set aside, chop when cooled and add

steps two!
- thinly slice potatoes
- add chicken broth then potatoes to the large pot, cook on medium heat till potatoes are well cooked and fall apart with a fork ( this will take about an hour! )
- add salt and pepper and red pepper flakes to taste right now

steps three!
- add seasonings! cumin, chili powder and cayenne are what make this dish warm and calming
- chop kale into bite sizes, stir in kale (or other greens!) into pot!
- cook the leaves down till tender and bright ( about three minutes, be sure to cover pot for a good steam )

steps four!
- whisk heavy cream quickly with two finger pinches of flour until clump-less
- stir in heavy cream into pot and heat for a minute before taking pot off the heat

- serve after cooling slightly because it will be hot!

if that's not your thing dial back the spices and use a mild meat! try substituting spices with traditional Italian seasonings, to keep flavor in the dish
