Midnight Munchies

So it's about 8:30pm and it's the night before my birthday. I'm super bored and so I'm making random munchies. I was reading some new random manga and i saw all kinds of new foods. One thing I want to try is Taiyaki. I know it's generally made with a bean filling but I'm thinking chicken or tuna would be nice, sort of like a cross with a pot pie.

I'm waiting for my mold to get here so I can make Taiyaki so tonight I'm going to make Nori free onigiri...only because I'm out of Nori lol.

I started by making the rice and letting it cool it in the fridge for about 20 minutes (covered).

In the meantime I took a piece of boneless skinless chicken breast and a fresh tuna fillet and cooked them.

Chicken
In a pan with 1tbsp butter and 1tsp evoo (extra virgin olive oil)
1/8 c white wine
1/8 c chicken stock
1 tbsp lemon juice
1tsp paprika
Salt&Pepper
1tsp Cayenne pepper
1 lb fresh mushrooms of your choice (I like baby Portobello)
1/2 shallot minced
4 cloves garlic minced
1tbsp soy sauce
1 tbsp teriyaki
1 tbsp sugar
1 tsp ground ginger


Pan fry chicken until golden brown and juices run clear. Place on a plate and shread with a fork, place back into pan with 1/8 c white wine and 1/8 c chicken stock let simmer for 5 minutes then add seasonings garlic and shallot. Continue to simmer until all the juices are soaked up, increase heat once liquid is almost evaporated as to fry the chicken. Add 1 tsp ginger and 1tbsp sugar teriyaki and soy sauce  continue to fry until all juices are dissolved set aside

Tuna
1 fresh tuna fillet
2 cloves minced garlic
1 tbsp evoo
1 large lemon
Salt&Pepper
1 tsp paprika


Preheat oven to 350°f and set rack in center of oven. Place a thick sheet of foil on the counter place your tuna skin side down on the foil. Season generously use your hands rub the oil all over the fish followed by the garlic and the entire lemons worth of juice top it off with salt pepper and paprika cover with another piece of foil and seal tightly so no steam can get out
Cook for 20-30 minutes and remove from oven DO NOT OPEN FOIL for 10 minutes
Shread fish and mix with chicken

Onigiri filling
Mix both meats together with 1tbsp mayo 1 boiled egg (chopped up into tiny bits) and 1/2 avacado

Use your mold or make one with plastic wrap and foil and press cold rice into shape fill with filling then add a second layer of rice let sit a moment for rice to form serve with soy sauce or wasabi
