1C flour
1/3C sugar
1TB baking powder
1 egg
roughly 1/2 C water. Pour the last bit in slowly and stir, until the batter is thick but pourable.
Make small pancakes, about a tablespoon or two of batter per pancake. Once pancakes are on the hot griddle, add goodies of your choice.Cranberries, blueberries, banana slices and walnuts, chocolate chips, apple dices and cinnamon, etc. you are only limited by your tastebuds! You can also add flavored extracts to the batter.
Use brown sugar instead of regular sugar, and pumpkin spice (1tsp cinnamon , 1/2 tsp each ginger, and nutmeg) for spice pancakes.
These pancakes won't have the 'pancake aftertaste' that regular mixes have. It's really more of a cake batter, making them true pan-cakes!
