Leche Flan
The Leche Flan is a dessert recognised around the world. Known as creme caramel, it is a Filipino favorite in every fiesta or occasion. This recipe is copied from the back of a milk can, and i can vouch that it is truly smooth and creamy. You can use the traditional mold (llanera) or any round metal pans.
Leche Flan Recipe
Ingredients
For flan:
10 pieces raw eggs
1 390g can sweetened condensed milk
1 370ml can evaporated milk
1 tsp vanilla extract
Rind of 1 calamansi (optional)
I cup light brown sugar
Instructions
1.) Separate the yolk from the egg white. Only yolks will be used. Freeze egg whites for future use.
2.) Beat yolks in a bowl.
3.) Add condensed milk. Mix thoroughly.
4.) Mix in evaporated milk, vanilla extract and calamansi rind.
5.) Put the mold (llanera) on top of the stove and heat using low fire.
6.) Put in the sugar on the mold/ round pan and let it melt until a light brown color.
7.) Swirl the caramel to coat the bottom of the mold evenly.
8.) Let cool for atleast 5 minutes.
9.) Pour egg mixture into molds.
10.) Cover the top of the molds with aluminium foil.
11.) Steam for 30- 35 minutes.
12.) Cool to room temperature.
Serve and enjoy, best eaten alone or with ube halaya on halo halo.
