SERVES: 4-6 servings
INGREDIENTS: 1/2 cup sugar 1/4 cup chocolate powder 1/4 cup cornstarch 1/4 teaspoon salt 2 teaspoons instant coffee powder 1/4 cup chocolate chips 2 cups cold milk (using 2% white milk will give it a richer flavor) 1/2 cup cold half and half 2 tablespoon butter 1 teaspoon vanilla extract
INSTRUCTIONS:
1. In a medium sized pot combine sugar, chocolate powder, cornstarch, salt and coffee. Whisk together.
2. Now add chocolate chips.
3. Gradually pour in milk along with the half and half, whisking in.
4. Turn stove on medium heat and bring the mixture to a boil, stirring constantly.
5. Boil for one minute then remove from heat.
6. Now whisk in butter and vanilla, continue to whisk for a couple minutes while the pudding cools.
7. Serve warm if you like or transfer to a bowl to chill. Press the plastic wrap directly onto the pudding to avoid a hard layer or "skin" on top of the pudding.
