This recipe does not include vegan meat substitutes, instead we will be using something tastier and healthier: beans and veggies!
On with the recipe!
Ingredients:2 15 oz cans of black beans drained and rinsed.
3 cups frozen veggie mix, I used cauliflower, carrots, and broccoli mix but you can use any frozen vegetables you'd like.
2 cups frozen corn.
2 medium onions or one large one.
2 small bell peppers.
1 7.5 oz can of tomato sauce or use a can of diced tomatoes with green chili peppers
2 cloves of garlic.
2 tbsp of corn (or any oil that can handle high heat but not olive oil) oil
1/2 tsp of salt.
paprika, cumin, pepper, chili powder, garlic powder to taste. I recommend using a teaspoon at a time of each, adjusting to your taste buds.
Directions:
1 Pour your oil into a large pot on the stove at a medium high heat. While you wait for for your oil to heat up, chop onions and bell peppers finely (or roughly if you'd like) and place. Cook for 5 to 10 minutes.
2 Cook your frozen vegetables in a large microwave safe bowl for 5 minutes or longer or shorter depending on the strength of your microwave. Cook your corn separately for three minutes.
3 Once your onions and bell pepper are very tender, mince the garlic and add to the onion and bell peppers mixture, cook garlic for 1 minute until fragrant.
4 Add the rest of your ingredients into the pot, stir, season to taste, and cook on high heat for five minutes.
5 Serve with tortilla chips, or taco shells, or tortillas, with avocado or however you'd like.
Thoughts on the recipe
My sister and made up this recipe today but we've seen and tried recipes very similar one. I really like this recipe the best thing about is you don't really need to use exact measurements, we didn't measure, but to give you all an idea of how much and what goes in, I estimated how much of each ingredient we used.
This recipe is very flexible, you can use whatever beans you want or you can use mushrooms, fake meat crumbles, stir fried tofu, the possibilities are endless.
This recipe is healthy being loaded with good carbs, protein, and it's low in fat.
Final thoughts: It's definitely a 9 out of 10(I'm not that huge on Mexican food that's why). I'd make make plenty of more times. It's filling, flavorful, and I highly recommended you try it even if you're keen on only making taco meat using real meat. Trust me, this recipe is better than real taco meat plus it's so much healthier(more micronutrients and less calories than meat).If you do try this recipe please let me know if you like it, love, it, dislike it, or hate it in a comment or private message.
