You will find all the wonderful flavors of an apple pie in these Apple Pie Cupcakes with brown sugar and cinnamon frosting.
~Ingredients:
-Yellow Cake:
2 1/4 Cups All Purpose Flour.
1 1/2 Cups Granulated Sugar.
3 1/2 Teaspoons Baking Powder.
1 Teaspoon Salt.
1 1/4 Cup Milk.
1/8 Cup Vegetable Oil.
1 Teaspoon Vanilla Extract.
3 Large Eggs.
8 Tablespoons (1 Stick) Unsalted Butter, softened.
-Apple Pie Filling:
3 Tablespoon Granulated Sugar.
3 Medium sized apples, cored, peeled, and diced into small pieces.
1 Tablespoon Fresh Lemon Juice.
1/2 Teaspoon Ground Cinnamon.
1/4 Teaspoon Salt.
2 Tablespoons (1/4 Stick) Unsalted Butter, softened.
2 Teaspoon All Purpose Flour.
-Frosting:
16 Tablespoons (2 Sticks) Unsalted Butter, softened.
1/2 Cup Brown Sugar.
1 Teaspoon Ground Cinnamon.
1 Teaspoon Vanilla Extract.
3 Cups Powdered Sugar.
2 Tablespoon Milk.
-Topping:
Ground Cinnamon.
Apple, sliced.
~Directions:
-Making the Cupcakes:
Step 1: Preheat oven to 350 degrees fahrenheit. Line the cupcake tray with liners.
Step 2: Mix softened butter on medium for 1-2 minutes.
Step 3: Combine the dry ingredients with butter for 30 seconds.
Step 4: Add the milk, oil, vanilla and eggs and mix on medium - high for one minute.
Step 5: Pour the batter into the prepare tray. Start checking the cupcakes around 15 minutes until toothpick inserted comes out clean.
Step 6: Let the cupcakes cool in the pan for 5 minutes, then turn out onto a cooling rack to cool completely.
-Making the Filling:
Step 7: Mix the apples, granulated sugar, lemon juice, cinnamon, and salt together in a medium bowl.
Step 8: Melt the butter in a medium pan over medium heat on the stove and add the apple mixture and cook, stirring frequently, until the apples are tender and liquid is bubbling. This will take about 6 minutes.
Step 9: Add the flour, and stir together until the liquid thickens.
Step 10: Remove from heat and let the filling cool completely.
